The KAMUT® International website has a great new look with lots of delicious KAMUT® Brand khorasan wheat recipes to fall in love with. Like these tasty muffins which make an excellent healthy breakfast option for those busy, on-the-go mornings.
2 cups KAMUT® Brand khorasan wheat flour
2 tablespoons baking powder
1 teaspoon sea salt
1 teaspoon cinnamon
¾ cup buttermilk
2 eggs (beaten)
½ cup honey
1 cup raisins
½ cup oil (I prefer our organic hi-oleic safflower oil, of course)
½ cup chopped walnuts
¼ cup brown sugar
¼ cup butter (melted)
½ cup KAMUT® Brand khorasan wheat flour
Mix the topping ingredients together in a small bowl and set aside.
In a large bowl, mix together all the dry ingredients then stir in raisins. Next add the wet ingredients (oil, eggs, honey and buttermilk). Stir well.
Line muffin tins with baking cups or grease well. Fill the muffin cups half of the way full with dough. Sprinkle one heaping tablespoon of topping on each muffin.
Bake at 350° F for 15-18 minutes. Muffins are done when toothpick comes out clean. Enjoy!
