A few weeks ago I enjoyed a really great evening with a group of wonderful people. As well as the excellent conversation I had some delicious homemade borscht.
It was so good that I asked for the recipe so that I could share it with you. Borscht as you may know is traditionally made with beets. Now, I don’t want to hear about you not liking beets. They are so good for you and in this soup all the flavors blend so well I promise you’ll love them! We added a little local touch with some KAMUT® grain. 2 chicken breasts
2 whole beets
3 or 4 potatoes
4oz tomato sauce
fresh cilantro or dill
1 cup cooked KAMUT® Brand wheat grain (optional)
Fill a 12-quart soup pot half full with water. Cut beets in half-inch strips and cube the chicken breasts. Boil the chicken and beets until the beets start to lose color, then cube the potatoes and add to the chicken and beets pot.
Meanwhile, dice carrots and onion and sauté them in a frying pan until semi-soft then add tomato sauce. When potatoes start to soften, reduce heat to medium and add the carrot/onion mixture to the pot for 10 minutes. Turn off heat, cover and let sit for a half hour.
Top with a dollop of sour cream and some fresh cilantro or dill. And for an extra health boost, add some cooked KAMUT® Brand wheat grain. Just boil for 45 minutes, or until soft, and sprinkle on top.
