Before the bad hail storm hit our garden the first week in June, we were able to get plenty of spinach from the garden for this really easy, very healthy side salad. One of my favorites!
Makes 2 servings
½cups – KAMUT® Brand Wheat berries
3-4 handfuls – baby spinach
¼cup – sunflower seeds
2oz – crumbled feta cheese
½cup – fresh squeezed orange juice
¼cup – walnut oil (I would use hi-oleic safflower oil grown and crushed on our farm by our Oil Barn project)
2Tbs – honey
½tsp – crushed red pepper flakes
Salt and pepper to taste
Soak the KAMUT® Brand Wheat berries overnight in 2 cups of water, drain, put into a saucepan and cover with water (at least 2” higher than the KAMUT® Brand Wheat berries) bring to a boil, reduce to a low heat and simmer for 20-30 minutes. The KAMUT® Brand Wheat berries should be tender but still slightly chewy. Drain and cool.
Assemble and toss all the salad ingredients.
Put all the dressing ingredients into a jar with a lid and shake until well blended. Drizzle over salad and toss well.
